As an FA who went thru a huge life upheaval and then tried to date after. The best thing to do is to take her at her word and respect that boundary.
If you want to offer her friendship, then only do so if you are truly okay with and unattached to, any specific outcome. I've had men tell me they are okay with being friends when they really were not and it just added stress to me.

I planned to respect the boundary but I also really care about her and it’s tough. I would like us to be able to be friends but also think it’s highly unlikely we would be able to carry that on right now or possibly ever based on the feelings we both feel. |

As difficult as it is, respect that no means no,not later,not maybe.
If she hasn't asked you to wait then don't wait, because as you said there IS pressure in that.
Grieve, she called it off. And she had good reason, this is her time for her, and your time to work toward acceptance for your sake and hers.
