What are the signs and characteristics of someone who has built up an emotional wall?
How does one attempt or break it down?

If the person has emotional walls and you didn't behave in a way to create them, you can't "break them down." Those walls have zero to do with you and are the person's responsibility to choose to deal with and heal or not.
You can be consistent, trust-worthy, communicate directly and without judgement/getting triggered, and have strong boundaries. Eventually, maybe you'll be able to slowly build enough friendship intimacy over time to ask them about it. But you really can't expect anything or do very much else besides leading by secure example, and if they want to work on it, they will.
